Observation (CORRECTED DURING INSPECTION): Samosas (6 pcs) in hot holding cabinet was at 6-7 deg C. Placed directly in hot holding from cooler.
Corrective Action(s): Samosas were placed in hot holding for 20 mins directly from cooler. Remove samosas and re-heat to 74 deg C. Ensure to pre-heat hot holding cabinet before placing re-heated samosas so that they can be maintained at 60 deg C.
