Observation (CORRECTED DURING INSPECTION): The second line prep cooler was unplugged and the inserts on top measured between 15-20 C.

Comments

-Ensure that all foods kept in storage are in sealed, pest proof containers as a preventative measure.

All coolers were < 4 C. The second line cooler was retested after it was plugged in and the ambient temperature reached 4 C.
Freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher final rinse cycle had 50 ppm chlorine. Test daily.
The glasswasher had 12.5 ppm Iodine. Test daily.
No evidence of pests at the time of the inspection.
General sanitation was satisfactory.
