- Handsinks are stocked with liquid soap and paper towels
- 100ppm chlorine sanitizer is available. **Ensure to store cloths IN THE SANITIZER BUCKET to let them sanitize properly.
- Temperature log is not up-to-date. **Start monitoring and recording temperatures of refrigeration units.
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers)
- High temp dishwasher reached adequate sanitizing temperatures of 75C at plate's surface
- Discussed hot holding of chicken soup with the operator
