Secondary cook step for donair meats observed.
Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
The dishwasher had 50 ppm chlorine. Note: Several runs were required for the dishwasher to have 50 ppm chlorine at the plate level.
Sanitizer solution had 100 ppm chlorine.
No evidence of pests.
General sanitation was satisfactory.
