Observation: - Flour present on floor around mixer and food splatter present on wall behind mixer
- Grime present on exterior of line cooler and worktop cooler in kitchen
- Grease accumulation present on exhaust vents and speed rack adjacent to deep fryers.
Note: Decal on exhaust canopy indicates next service due Feb 2023; however, removable vents require cleaning.
Corrective Action(s): - Thoroughly clean floor and wall around mixer to remove all food debris and splatter. Ensure this is cleaned frequently and thoroughly to prevent any accumulation.
- Clean/scrub exterior of line coolers, exhaust canopy vents and speed rack to remove grease/grime.

Observation: - Opening present at base of wall in area/alcove where convection oven was previously located. Additionally, wall appears unfinished and is lacking baseboard/coving.
Corrective Action(s): - Repair wall so that opening is no longer present. Paint wall so that it is a durable, washable finish and install baseboard/coving so that dirt debris does not collect in this area.

Observation: - Neither staff (barista or kitchen staff) on duty have completed Foodsafe level 1 or equivalent
Corrective Action(s): - In operator's absence, at least one staff on duty must have Foodsafe level 1 or equivalent. Ensure an adequate number of staff have completed Foodsafe level 1 (or equivalent) to ensure requirement is met.
Note: Kitchen staff member reported they are registered for Foodsafe level 1 and completion of exam is pending. Once course is complete, keep a copy of certificate on-site as confirmation.

Comments

- Handsinks in kitchen and coffee bar area were supplied with liquid soap and paper towel
- Staff/public washrooms maintained and supplied with liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- walk-in cooler 2C
- work top cooler 0C
- line cooler 1C
- 2 door undercounter barista cooler 4C
- display cooler 2C
- prep cooler (front) 2C
(Note: small display cooler not in use)
- Freezers were maintaining food products in a frozen state
- Foods in coolers were stored in a manner to prevent contamination. Foods were covered/wrapped. Raw meats and raw eggs were stored beneath ready to eat items.
- Dry goods were stored on shelving off of the floor.
- Ice machine appears clean/maintained with ice scoop stored in a sanitary manner on designated hook.
- Dishwasher was operational and dispensing adequate sanitizer to sanitize dishes. >50ppm chlorine detected on dish after cycle.
* Chlorine test strips present; however, colour comparison indicator not present with strips. Obtain new package with colour comparison indicator to ensure strip is read accurately. Ensure dishwasher sanitizer level is checked at least daily to ensure dishes are being sanitized.
- Chlorine sanitizer solution present in spray bottles and containers for in use wiping cloths. Concentration measured 200ppm chlorine.
- Sanitation of premises maintained in areas other than those noted in above violation.
- No signs of pest activity observed at time of the inspection. Ensure regular monitoring and pest control service remain in place.
