Observation (CORRECTED DURING INSPECTION): 1) Bleach sanitizer solution in spray bottle in main kitchen and front bar area are of very high concentration (>200ppm) and bleached out the test strips.
Corrective Action: Operator diluted the bleach solutions to prepare sanitizer of 200ppm. This is important to adequately sanitize surfaces and not pose a chemical hazard. Very strong bleach solution can be toxic.
2) Large pots observed to be washed with detergent but not sanitized during inspection.
Corrective Action; Staff rewashed and sanitized the pots during inspection. Adequate sanitation is required to prevent microbiological growth and food contamination which may cause food borne illness.

Observation (CORRECTED DURING INSPECTION): 1) Ice machine in bar has mold growth near filter.
Corrective Action: Ice is discarded during inspection and ice machine is turned off. Do not use the ice machine until it's properly cleaned and sanitized. Mold can contaminate ice and cause foodborne illness.
2) Food stored in black garbage bag in freezer.
Corrective Action: Food is removed from garbage bag and covered by food-grade plastic wrap. Garbage bag is not food-grade material and can potentially leach chemicals into the food which may cause foodborne illness.
3) Raw meat and raw egg stored above ready to eat food items inside walk-in cooler.
Corrective Action: Raw meat and egg was placed below ready to eat items during inspection. Always place raw egg and meat below ready to eat foods, fruits and vegetables to prevent food contamination.
4) Operator mentioned mop water is disposed of in dishwashing sink.
Corrective Action: Clean and sanitize the dishwashing sink. Going forward, dirty mop water must be discarded into washroom and not in dishwashing sinks, as this can potentially contaminate dishes.
5) Rack with deep fried snacks stored next to garbage bin.
Corrective Action; Snacks were transferred to a food-grade container for storage. Rack for food storage is moved away from the garbage bin. Storing food near garbage bin can potentially contaminate food.
