306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Accumulation of dust on the upper walls, ceiling tiles, and on ceiling air diffusers. The dust could fall into food and contaminate it.
2) There is mould and food stains on the wall in the dishwashing area. This will attract pests.
Corrective Action(s): 1) Wash the walls, ceilings, and ceiling air diffusers to remove the dust. Cleaning of these areas shall be done at least once a month or more.

2) Scrub the walls in the dishwashing area to remove the food stains and mould. Cleaning of these areas shall be done on a regular basis (at least weekly).

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Aluminum foil covering the sides and back splash of the wok cooking station. Staff indicated the foil is changed weekly. Foil is not durable or cleanable, accumulated grease on the foil will attract flies and pests.
Corrective Action(s): Aluminum foil covering surfaces/equipment MUST be removed and thrown away at the end of every night. New foild must be installed in the morning. If this is not done, then foil shall NOT be used to cover surfaces/equipment.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: There are holes in the wall by the ice making machine, the wall has exposed drywall. The wall is no longer sealed and cleanable, food will be absorbed into the drywall.
Corrective Action(s): Repair the wall so it is durable, smooth, level and sealed. It is recommended that a durable material (FRP or EXCELiner FRP Wall Panel) is installed on the wall to prevent future holes and damage.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C; freezers -18C; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 71.1C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; foods stored in groups with raw meats separate from RTE foods; and foods stored 6" off the floor on racks and shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good, improvement needed in the mentioned areas.
- Exhaust canopy filters and exterior surfaces are clean, however the canopy is overdue for a professional cleaning and service. The service sticker stated the next cleaning was due in September 2022. **Immediately call the service company and schedule a cleaning to be completed by Feb. 28/23**
- No signs of pests.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm. Ensure the bleach and water solution in the cloth bucket is changed every 2-4 hours.
- Valid FoodSafe Level 1 certificate possessed by present staff.
