***Monitoring records not being maintained. Staff member was not trained on how to record/document. The data is important to show the premises is doing its due diligence especially in the event of a complaint.
Dishwasher final rinse tested at 74c (at plate level). Soap dispensed into wash cycle.
Front counter top cooler cold holding at <4c.
Other coolers in the up front area are not in use and have been turned off.
Back room coolers which are in operation and containing perishables (As many are not in use and have been turned off) cold holding at <4c
Back room freezers which are in operation cold holding at <-18c
Liquid soap and paper towels at front hand sink. Hot and cold water supplied.
No signs of observed pest activity. Monitoring stations in place for pest activity.
