Routine inspection:
- Prep cooler & walk-in cooler maintained at 4C or lower.
- Glass door beverage cooler at 4C.
- Display cooler not in use. Only non-potentially hazardous beverages stored inside.
- Domestic freezer at -19C.
- Meat slicer maintained in a sanitary condition.
- Reviewed manual dishwashing with the operator. Ensure 200 ppm bleach is used for the final sanitizing step.
- Temperature records maintained and available for review.
- General sanitation satisfactory.
- No sign of pest activities observed on site.

*Discussed the hot holding procedure for pizza with the operator. Pizza warmer unable to maintain at 60C at all times. Operator will be time tracking the pizza in the warmer. Any pizza stored in the warmer for more than 2 hours must be discarded*.
