**Hot holding monitoring logs not being accurately maintained for hot holding unit. Ensure temperature is taken about 30min after product has been placed into the hot holding unit. Currently on the top 2 rows are being used as the lower shelf of the hot holding unit is still not capable of hot holding at >60c
