Comments

-Station and storage areas for business are maintained in sanitary condition.
-Food stored in a manner that prevents contamination both with dry storage and refrigerated storage
-Walk-in cooler was 1C (currently allotted 3 shelves)
-Walk-in freezer was -19C (currently allotted 3 shelves)
-Quats sanitizer solution (200ppm) present in bucket at station. Wiping cloth stored in sanitizer solution.
-High temperature dishwasher functioning and met sanitizing temperature requirement. Final rinse was 80C at dish surface.
-Reviewed cooling procedures with Operator. Soups/stews are being cooled in shallow metal pans in a ice bath in the food preparation sink. Operator is stirring during the process and monitoring to ensure cooling is according to food safety time/temp criteria. (ie. 60 to 21C within 2 hours). Once cooled to room temprature, Operator portions product and transfers to walk-in cooler to continue cooling process. Revisions to food safety procedures submitted.
-Probe thermometer present for monitoring cooking and cooling temperatures.
-Operator will be processing/preparing the following items in addition to current items being prepared:
-Szeged goulash (frozen)
-Dill/eggplant sauce (frozen)
-Meatballs in turnips/carrot sauce (frozen)
-Steamed dumplings (frozen)
-Rice, vegetable, cheese souffles (frozen)
-Stuffed peppers in tomato sauce (frozen)
-Lentil stew (frozen)
-Roasted vegetables/potatoes (frozen)
-Above products will be sold in plastic pouches (as per original approval), 400ml foodgrade plastic containers and portioned/combined as frozen entrees into food grade (2 compartment) containers .
-Food safety procedures for the above and process based plans have been submitted. Operator has approval to prepare the above mentioned items in addition to current items being prepared.
-Additional refrigeration space and freezer space may be needed once additional items are added. Operator reported preparation of products will be rotated rather than prepared all at once.
