Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation: Rice and chicken that have been precooked are being stored below 60C which is in the temperature danger zone.
Correction: Immediately discard rice and chicken that were previouysly cooked and have been stored between 4 and 60C (40-140F) for more than 2 hours. Rice in cenvection oven and hot holding unit were discarded during inspection. Some chicken recently cooked and has been at <60C/140F or hotter.

Inspection of Barcelos in food court to check drawer cold holding, hot holding, and dishwasher and tong storage.
Food Safety Plans - operator has copies.
Today:
Drawer cooler under grill - food temperature is below 4C (rice and cooked chicken).
Hot holding rice (by handsink) >60C/140F - good
Hot holding chicken near grill >60C/140F - good
Dishwasher has a final chlorine sanitizing rinse of 5-100 ppm. Receipt for test strips available.
Tongs are cleaned and sanitized (water changed) every 2-4 hours.
Operator checks in daily (Foodsafe) - one person/shift.
