Observation (CORRECTED DURING INSPECTION): No sanitizer detected in containers with cloths submerged. Operator said that staff change sanitizer every 2 days.
Corrective Action(s): Ensure sanitizer is made fresh at the start of each day and is readily available in all food preparation areas for staff to use. Change sanitizer routinely throughout the day to maintain concentration of 100ppm chlorine. Keep all wiping cloths stored in sanitizer solution when not in use to prevent microbial growth. Obtain test strips to verify concentration of sanitizer solution.

Observation (CORRECTED DURING INSPECTION): Back door to kitchen was open at time of inspection. Door to patio which is immediately behind kitchen door was also open.
Corrective Action(s): Ensure door to kitchen is closed to prevent the entry of pests. Highly suggest installing a self closing hinge on the back door to kitchen to avoid this repeated infraction.

Comments

All hand wash stations were fully equipped with hot/cold running water, soap and paper towel.
All coolers with perishable foods stored inside at 4C or less (display case, under counter coolers, prep cooler, upright 1 door cooler, sliding 2 door cooler in dry storage...etc).
All freezers -18C or less.
No hot holding available at time of inspection (soup had finished)
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Light covers have been installed over all lights in kitchen food preparation area.
Meat slicer appeared clean at time of inspection.
Ice machine not working and was empty at time of inspection. Ice machine appeared clean. Scoop for ice in ice well stored in a separate container outside of the ice.
High temperature dish washer achieved 71C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered..etc)
