- All hand washing stations were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available in sanitizer buckets at 100 ppm (chlorine)
- Low-temperature chemical dishwasher registered 100 ppm chlorine residual at the dish surface, detected after the rinse cycle. Test strips available - ensure to check concentration of dishwasher sanitizer residual on a daily basis.
- All coolers were measured at 4C or colder. All freezers were measured at -18C or colder. Hot held food items were measured at 60C or hotter.
- Food storage practices were satisfactory. Food stored in coolers were organized and properly covered. Good separation of raw and ready-to-eat items. Scoops for dry ingredients properly stored.
- Containers of pre-fried food items and vegetables were out at room temperature for the lunch rush. Temperature of food was still at 4C or colder at time of inspection - Ensure to return these items to the cooler after a maximum of 2 hours. The amount of food held at room temperature was small enough such that most items would be used up within 2 hours.
- Raw chicken was being prepared/cut/marinated at time of inspection. Also ensure this chicken is returned to the cooler within the 2-hour limit of being out at room temperature.
- Ice machine maintained in sanitary condition and scoop properly stored. Ventilation canopy maintained in sanitary condition.
- General sanitation was satisfactory. No signs of pest activity noted at time of inspection.
- Staff washroom sink properly supplied. Customers washrooms also properly supplied.
