Ensure it is able to maintain foods at 60C or greater. - High temperature dishwasher is available. Final rinse temperature reached 78.6C at the plate level. - 200 ppm Quat sanitizer available in bucket with wiping cloths - Temperature monitoring is in place - No signs of pests observed during inspection.
