Observation (CORRECTED DURING INSPECTION): Soft serve vanilla dessert mix (Arctic Mist BRAS) machine is only being rinsed with hot water.
Corrective Action(s): Provide written information on how the machine is being cleaned and sanitized. Verify the sanitizing method for the BRAS soft serve dessert machine with the machine manufacturer's instructions manual. As with ice cream scoops, 2 mL of domestic bleach in 1 liter of water (100-200ppm chlorine) is a suitable sanitizer for food equipment, tray under self serve nozzle, etc.

Manager on site has Food Safe training (2018). Keep copy of certificate on site to verify.
Hand washing sink - to be for hand washing only. Liquid soap and paper towels are provided. (Do not use bar soap)
Reviewed procedures for cleaning and sanitizing ice cream scoops (every 4 hours when in use or after use if not busy). Store in running water (dipper well) or rinse in cold water before each use.
Coolers are at 4 C or colder - good.
Dates on meat - good.
Freezers - good.
Vanilla Dessert Mix - reviewed ingredient information (information for customers) with Manager.
Scooped ice cream - ingredient information is available.
Keep food up off of the floor (in back storage room).
