Observation: A tray of clean cutleries was being sorted and wrapped with napkins near a plate of food at the staff table. Bathroom door opening into the kitchen was left open. This was a concern noted in the previous inspection report.
Corrective Action(s): Do not handle clean utensils when eating. Keep bathroom door close. Recommend installing a self-closing device on the door.

Comments

Hollandaise sauce is made from fresh shelled eggs. Use of pasteurized yolks was tried but was discontinued. To prepare the sauce safely, heat to a minimum temperature of 63C/145F for 15sec and verify with a thermometer. Keep hot at 60C/140F until served if making ahead of time. If unable to reach the safe cooking temperature, incorporate a consumer health advisory on your menu to inform diner of the inherent risk of consuming undercooked eggs in the Hollandaise sauce. Alternately use a packaged mix and follow the manufacture's direction.

Cubed cooked potatoes where cooling in the fridge in a deep container. Recommend cooling in shallow containers to speed cooling.

Temperature log posted on the fridge/freezer units had no entries after the first week of this month. Ensure daily temperatures are checked and recorded.

Clean the top outside surface of the dishwasher to remove debris.

Grease noted under the cooking equipment. Operator stated that the floor is cleaned daily. The oil was changed today which resulted in spilled grease on the floor.
