- General sanitation - satisfactory at the time of inspection. - Sandwich prep cooler was at 4 deg C (top) and 3.9 deg C (bottom). - Under counter coolers from 3.2 deg C to 3.6 deg C. - Egg cooler at 2 deg C. - Back cooler at 3.6 deg C. - Dairy dispensers were at 4.0 deg C. - Walk-in freezer at -17 deg C. - Walk-in cooler at 3.3 deg C (shearing with a gas station). - All hot holding units >60 deg C. - Storage - organized. - Surface sanitizer (front/back) - Quats at 200ppm. - Handwash stations supplied with hot and cold running water, liquid soap, and single use paper towels. - 3-compartment sink - satisfactory. - Mixing spoons stored in ice/water mixture. - Ice machine - clean. Ice scoop stored safely at the time of inspection (away/in container). - A professional pest control - available on site. Traps are set and empty. Note: A new food item, pizza is offered to customers now (new item implemented on April 17, 2024). Pizzas prepared as per order(s) (cooked and served). Bread/crust is ready to eat and ingredients are stored in the prep. cooler. Please ensure that a foodsafety plan is available for a new menu item. Recommendation: - Do not double stack uncovered bans. - Do not leave ice-machine open all the time.
