Routine check of the Serveries in The Pointe (D2 East and North, D3 East and North).
Food is from the Terraces Main Kitchen and served from the servery kitchens (hot temperature records are kept for each hot meal for each floor). Toast is made in serveries.
D2 East and D3 East both have commercial dishwashers to wash and sanitize dishes. D2 North and D3 North do not have dishwashers (east servery dishwashers are used).
Both dishwashers have final hot water sanitizing rinses (>180F on the final rinse gauge and >160 F measured inside of the machines.
All serveries have a domestic cooler (air temperatures are at 4 C/ 40 F or colder).
Daily temperature records are kept for coolers and for the dishwasher temperatures.
Hand washing sinks have hot/cold water, liquid soap, and paper towels in dispensers.
Counters/cupboards were replaced recently and are still in good condition and are kept clean.
Where quats sanitizer is available in spray bottles - 200ppm quats was detected using test strip.
Sanitizing buckets were empty. These are filled prior to next shift with quats sanitizer dispensed from the main kitchen.
If using the dishcloths that have sanitizer in the cloth, follow directions from manufacturer for changing wiping cloth.
Pest monitoring traps are in place. No concerns noted.
