Temperature controls:
- Walk-in cooler: 3C, 2 door freezer in kitchen: - 21C, Standup cooler in kitchen: 1 C, 2 door freezer in back room: -20 C
- Store freezers measured at or below -18C. Chest freezer: -20 C
- Condiments cooler: 3C
- Server station freezer: -19 C
- Prep freezer (by rolling rack): -18C
- Hot holding, rolls and hot dogs at or above 60C,

General:
- Running hot and cold water is available. Hand washing sinks are fully supplied. Ensure to keep hand washing stations clean and fully supplied.
- 3- compartment sink for warewashing maintained. 200 QUATS sanitizer solution is available. Test strip available. Use test strips to verify concentration of solution.
- Serving utensils are cleaned and sanitized every 2 hours.
- Fryer Vent hood noted clean and in sanitary condition. Chicken braiding station kept clean and no excessive build up observed in the kitchen.
- No signs of pests activity noted.
- Removing unneeded items discussed. Some general cleaning is required in hard to reach areas such as under coolers and under freezers.
- Mop sink maintained. Mop bucket is to be stored empty when not in use.
- Premises well lit.
- Staff are food safe trained.
