Observation (CORRECTED DURING INSPECTION): Dishwasher was out of detergent and no replacement was available on site. Staff stated they were having a hard time finding a replacement. A detergent must be used when washing dishes to remove all the grease so that the sanitizer can work on the dish. With out soap being used first, bacteria and virus can hide under the grease and not be killed by the sanitizer.
Corrective Action(s): Granular dishwashing detergent was purchased during inspection. Use this according to the directions on the box until the proper dish detergent for this model is found. Due: Dec 19, 2023

Observation (CORRECTED DURING INSPECTION): 1) Raw chicken stored on the top shelf above all other foods (including tomatoes for salad and bean sprouts) in cooler next to staff bathroom. Raw meat must always be stored below and/or separate from all other foods to prevent meat juices from accidentally dripping onto other foods, especially foods that are not cooked before being eaten
2) Ice scoop found stored laying on ice in ice machine.
Corrective Action(s): 1) Raw chicken moved to bottom shelf during inspection.
2) Ice scoop moved to container on shelf above the ice machine during inspection.

Observation: Food and grease build up observed on the floors under and behind all equipment.
Corrective Action(s): Do a deep clean of entire kitchen including all floor areas under/behind all tables, coolers, freezers and cooking equipment. Also ensure dust is removed from the ceiling and the staff bathroom is reorganized to allow for easy cleaning and storage.
