Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Dishwasher has no sanitizer in the rinse cycle.
2) Several yellow wiping cloths are being stored on countertops.
Correction: 1) Get the dishwasher serviced. In the meantime, after the dishes come out of the dishwasher, soak them in a 200ppm bleach/water solution for a minimum of 2 minutes before airdrying (do NOT rinse after soaking in bleach solution). Staff should be checking the dishwasher EVERYDAY to ensure that there's adequate sanitizer in the rinse cycle. If this infraction continues, a CORRECTION ORDER AND/OR VIOLATION TICKET may be issued.

2) Store wiping cloths in a sanitizer solution as discussed.

On Follow-Up:
-Dishwasher rinse now has 50ppm chlorine. Test it daily as discussed.
-Temperature log's being maintained for the coolers.
-Yellow wiping cloths are being stored in a sanitizer solution.
