Ambient air temperature in the small bar cooler at 4.9C. Milk stored inside at 2.0C. Ensure small bar cooler is keeping at 4C or below. Check thermometer every 2 hours and adjust if needed. Labelled chemical spray bottle has 300 ppm quats. Under counter cooler at -2.6C Sandwich display cooler at -2.5C Sandwich display cooler at -2.5C Sliding glass door cooler at -1.1C High temperature dishwasher registered 72.6C at plate level during the final rinse cycle. Hand washing station provided hot/cold running water, liquid soap and single use paper towels. No pest activities noted. Reminder: Temperature logs are not maintained. Ensure temperatures are monitored and maintained on a daily schedule. This is a reoccurring issue.
