Observation (CORRECTED DURING INSPECTION): Observations: 1) Cut mushrooms stored at room temperature without time tracking - measured at 20 deg. C.
2) Chopped potatoes stored in broken cooler at room temperature without time tracking - measured at 1 deg. C. Operator stated it had been placed there 45 mins ago and that they would place potatoes back into cooler
Corrections: 1) Mushrooms were discarded
2) Track time using timer and do not store potatoes at room temperature for more than 2 hours. Discard leftover potatoes after 2 hours and do not place it back into fridge. Potatoes were discarded

Observation (CORRECTED DURING INSPECTION): Observations: Sanitizer in bucket measured approximately 50 ppm quats, sanitizer still measured 30ppm quats after replacing with new batch
Corrections: let the dispenser run for around 10 sec. before filling bucket with sanitizer to ensure appropriate concentration.
Regularly test sanitizer concentration using test strips

Corrections: Repair both staff washroom sinks so that water can drian and proper handwashing can occur.
In the meantime, ensure that staff are using other handsinks to handwash
