Observation (CORRECTED DURING INSPECTION): Refried beans and melted cheeses were hot held on the stove at 48C and 51C respectively. Staff stated they were hot held 3 hours ago. Staff was also not reheating the food before hot holding them.
Corrective Action(s): Aforementioned food was discarded. Food must be reheated to at least 74C internally first before hot holding at 60C or above.

Observation: Mildew observed on the wall inside the ice machine.
Corrective Action(s): Clean and sanitize inside the ice machine. Discard the current batch of ice and the first batch after sanitizing the walls. Correct by: today.

Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was mixed with detergent in a bucket and used to sanitize food contact surfaces.
Corrective Action(s): Do not mix bleach sanitizer and detergent together. Discard the mixed solution and prepare 100-200 ppm bleach sanitizer. Clean and sanitize all food contact surfaces.

Corrective Action(s): Do not cool drinks inside the ice machine. The exterior of the bottle can contain contaminates and contaminate the bottle.

Observation (CORRECTED DURING INSPECTION): Raw meat were thawing on the counter at room temperature. Temperature of the meat measured at -2C.
Corrective Action(s): Move the frozen raw meat into a functional cooler immediately. Acceptable thawing procedures must be followed such as in a foundational cooler, under cold running water and microwave. Do not thaw food at room temperature.
