306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Potato cutter equipment is covered in dried food debris from lack of cleaning after use. Staff were not aware of how to dismantle the equipment to properly clean.
Corrective Action(s): Clean and sanitize the equipment to get rid of any food debris build-up. Ensure equipment such as the potato cutter is cleaned more frequently.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler located in the kitchen directly infront of the burner stove was measured at 11C. One corner inside of the prep cooler is covered in ice.
There is enough cooler space otherwise (walk-in cooler and other prep coolers) to store necessary items.
Corrective Action(s): Repair/service the prep cooler so it is able to achieve a temperature of 4C at all times. Until the cooler temperature can achieve 4C, do not store any potentially hazardous foods inside such as fish.

Observation: Handwash station and paper towel dispenser in the kitchen, next to the burner stove, are located too far apart.
Corrective Action(s): Install the paper towel dispenser next to the hand wash station, as per approved plans.

Comments

Premises is maintained in a sanitary manner overall.

-Hand wash stations are equipped with liquid soap, paper towels, and hot/cold running water. *See violation. Ensure paper towel dispenser is relocated*
-All coolers, except the one mentioned above, are at or below 4C. Storage is good. Food is covered.
-Both stand freezers are in working condition and achieve -18C
-Fish is being thawed in an acceptable manner
-Fume hood service is scheduled for April 26, 2022
-Permit is posted in a conspicuous location
-FOODSAFE level 1 staff is on-site
