Observation (CORRECTED DURING INSPECTION): More than 200 ppm chlorine sanitizer was available in the bleach water as the test strip was blanking out.
Corrective Action(s): Ensure 100 ppm chlorine (1/2 teaspoon of bleach per L of water) is available in the bleach water.

Comments

Liquid soap, hot and cold running water, and paper towels were available at the handsink.
Cooler was 4 degrees C (40 degrees F) or less and it was equipped with an accurate thermometer.
Freezers were -18 degrees C (0 degrees F) or less.
Dishwasher final rinse was at 79 degrees C (71 degrees C or hotter at the plate).
The domestic dishwasher is not being used according to the person in charge.
The manual "wash, rinse, sanitize with 100 ppm chlorine sanitizer, and air dry" method was reviewed with the operator for the bread slicer.
No signs of recent pest activity were observed at the time of inspection.

NOTE: The kitchen is sometimes used by volunteers on Tuesday mornings.
