Observation (CORRECTED DURING INSPECTION): 2 issues noted;
-Fried fish filets in the back kitchen cooling on dish rack found to have house flies on them
-ice machine found to have mildew growing in well.
Corrective Action(s): Discarded 2 trays of fish filets and all ice in ice machine
eliminate fly infestation and ensure that all products are covered to protect them from contamination
sanitize the ice machine's ice well on a more frequent basis.

Observation (CORRECTED DURING INSPECTION): The mechanical slicer's blade housing and sharpener found to have food debris inside.
Corrective Action(s): Slicer must be FULLY disassembled, cleaned and disinfected immediately after use.

Observation (CORRECTED DURING INSPECTION): Mechanical dishwasher found to have 0 ppm chlorine at the dish surface. Both the detergent and sanitizer chemical buckets for the machine was found to be empty
Corrective Action(s): Replaced buckets and primed machine. low temperature dishwasher found to have +50 ppm chlorine at the dish surface after cycle.
Test the machine on a daily basis using chlorine test strips to ensure that the machine is operating as required. discuss with sanitation company to have test strips available for staff to test machine daily.

-Rodent droppings observed in the kitchen area dry storage (on shelving around bread and other dry goods, underneath the oven, and in the dry storage room past the washrooms)
-heavy fly infestation noted in kitchen and back of house staff room. Flies noted on cooling fried fish in the back of the kitchen
Corrective Action(s): Have professional pest control come service the facility further for flies and rodents. Keep pest control reports on site for inspection.
