302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): (1) No food Contact Surface Sanitizer noted onsite at the time of visit. Staff Says they only wipe food Contact Surface with wet towels.
(2) Kitchen staff unable to explain manual warewashing procedure. Sanitizing comes first, wash and then rinse as per kitchen staff manual warewashing explanation.

Corrective Action(s): (1) Ensure bleach sanitizing solution is available at all times, either in sanitizing buckets or spray bottle at 100ppm concentration (one teaspoon of bleach in one litre of water). Confirm concentration using a test strip.
(2) Reviewed manual warewashing procedure with kitchen staff. WASH --> RINSE --> SANITIZE (in bleach water Concentration mentioned above).

This inspection done by EHO student.

* Lone cooling unit in premise (upright 2 door sliding cooler) 0 deg.C
* All handsinks equipped with liquid soap, paper towel, hot/cold running water.
* Ice machine noted in sanitary condition with ice scoop stored outside the machine.
* Temperature log and ice cream machine cleaning log well maintained and up-to-date.
* General sanitation is satisfactory
* No signs of pest noted at the time of visit.
* Health permit posted in a Conspicuous manner.


COVID-19 SAFETY PROTOCOL
- Plaxiglass shield noted onsite
- Alcohol based hand sanitizer provided for Customer use
- High touch surfaces disinfected hourly using high Concentration of bleach Solution.
