Met with store Manager, Nys, and the following items have been discussed: - new permit has been received and it is posted - daily temperature logs are available on site - sushi station: pH of the rice recorder/ measured with test strips cooler is operating at 3.2C - sandwiches station: prep cooler 2.8C/measured the internal temperature of the sandwich spread at 4C hot holding unit/dispay and soups holder measured at above 60C - 3 compartment sing used for manual dishwashing/ suplied with quat at concentration of 200ppm/test strips are available on site - at least one person with FS training is available per site - hand wash stations are supplied with disposable paper towesl and liquid soaps - Certified Pest control, Orkin, is monitoring the insect's trap light
