Observation: - Fruits are washed and cut on-site. Contrary to information that the operator provided to Fraser Health during the Initial Inspection conducted on 21-April-2022, food preparation observed taking place at time of inspection.
Corrective Action(s): - A sink designated for food preparation is required. [Correction Date: 03-March-2023]

- Contact Fraser Health with a proposed floorplan indicating where a sink designated for food preparation will be located before installing sink. Once written approval has been granted, a sink designated for food preparation must be installed.
- Alternatively, no food preparation (washing and or cutting fruits, vegetables, any food) permitted on-site. Per Health Approval to Operate granted on 21-April-2022, no food preparation on-site.

- Operation assembles charcuterie boxes. Contrary to information operation provided Fraser Health during the Initial Inspection conducted on 21-April-2022, food preparation observed taking place at time of inspection - fruits washed and cut on-site. A sink designated for food preparation is required. Food Safety Plan requires updating to indicate that food preparation takes place on-site.

- Handwash sink and employee washroom sink provided with hot and cold water, liquid soap and papertowels to facilitate proper handwashing practices.

- Food storage practices appear satisfactory. Storage is organized and food is protected from contamination.
- 200 ppm QUATS sanitizer available for sanitizing food contact surfaces and equipment.
- Drain plugs available at 3-compartment sink to facilitate manual warewashing and sanitizing procedures.
- Clean equipment and utensils stored in a sanitary manner.
- General sanitation of premises appears satisfactory.
