-Operator indicated smaller buffet hot holding will not be used and will be removed from the premises
-Larger buffet hot holding and cold holding units for private events measures at 80C (hot holding) and 4C (cold holding)
-Beverage cooler (soft drinks & alcohol) measured above 4C. No potentially hazardous foods will be stored in this cooler.

*Prep cooler measured at 7.5C. Adjust cooler to ensure it can maintain 4C or colder
