Observation (CORRECTED DURING INSPECTION):
- Observed cooked pearls and taro balls in room temperature holding. Time tracking sticker was available but employee stated that they are thrown out after three hours.
Corrective Action(s):
- Potentially hazardous food items should not stay in room temperature for longer than 2 hours. Products were discarded as it has been already 4 hours since they were prepared. Ensure to time track by writing down the time the toppings were cooked and ensure 2 hour limit is being followed.

Observation (CORRECTED DURING INSPECTION):
- No sanitizer in use during the operation. Staff stated bleach sanitizer is made before closing.
Corrective Action(s):
- Sanitizer should be in continuous use during operational hours. Ensure to equip at least one bucket of sanitizer in the prep area when opening. Bleach sanitizer was made at the time of inspection - measured at 100ppm.

Observation:
- Sink counter is bulging due to water damage (3 compartment sink).
Corrective Action(s):
- Counter needs to be replaced. Ensure to use adequate material to prevent water damage.

Observation:
- Debris observed in hard-to-reach areas and underneath equipment.
- Mould growth observed in the sink edges (1st prep sink).
- Deach cockroach, egg casing and droppings observed on the card board lining inside the cabinet in the front area.
- Cluttered environment observed through out the premises, inside cabinets etc.
Corrective Action(s):
- Clean areas noted above. Deep cleaning of the whole facility is required. Take out all of the items inside cabinets and clean & sanitize.
- Discard unused items or garbages. Re organize equipment, boxes in orderly manner.
- Do not use card board as liners. Discard them.
