209 - Food not protected from contamination [s. 12(a)]
Observation: Numerous repeat infractions found:
- old tin cans being used as food equipment (water containers, scoops, etc). NEVER reuse tins

- observed double stacked bowls of food with no covers in between. Never stack the dirty bottom of a bowl or container on top of clean food. Always use a food grade barrier (lid or wrap) in between.

- numerous items found in various refrigeration systems with no lids. Cover your food products, especially when a number of other foods are left above them.

- dairy crates being used to store vegetables such as cilantro and cut onions. As discussed in the past, diary crates are not food grade storage bins. Use only for packaged items.

- various items being used as scoops in dry goods bins, including old tin cans, bowls, and cups. NEVER store scoops in the food product. Always use proper scoops with handles that will not contaminate your ingredients.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent infestation ongoing. Observed droppings from wall to wall of the premise, with heavy droppings noted in the service desk area of the buffet dining room, the buffet storage closet, and medium droppings near the walk in freezer area
Corrective Action(s): 1) Call in a pest control company to do a thorough visit and hazard analysis
2) Deep clean your premise. When the restaurant is closed, move away all storage and equipment and clean from wall to wall. Discard any clutter not needed for day to day operation.
Note: if an adequate clean up has not been done, a closure order will be issued until a full clean has been completed
3) While doing your deep clean, you must inspect all walls / floor for rodent access points. Close all of these holes completely.
4) Inspect all of your product bins. EVERYTHING must be in pest proof containers with tight fitting lids. This means some of your old bulk bin style containers must be discarded and replaced.

Note: for cleaning rodent droppings (note where you observed them for your pest control company), use 9 parts water for 1 part bleach. Soak the droppings and clean up while wet to prevent the dust from further contaminating your kitchen.
Please read through the above violations carefully. Upon your follow up inspection next Friday, I will be prepared to close down the restaurant in order to facilitate further cleaning if necessary.
