- Hand washing sink accessible/unobstructed and properly supplied with hot/cold running water, liquid soap, paper towels.
- Bleach sanitizing solution for food-contact surfaces available at 100 ppm (chlorine residual).
- High-temperature dishwasher reached 86.5C at the dish surface during final rinse cycle. Good, minimum 71C at the dish surface required.
- Cooler measured 3C.
- Freezer measured -18C.
- No hot-holding.
- Temperature logs available and up to date. Accurate thermometers available.
