Observation (CORRECTED DURING INSPECTION): Large container of soup measured 60C in the walk-in cooler with the lid on.
Corrective Action(s): Do not put large containers of food in the walk-in cooler to cool as it will not reach temperature fast enough and may affect the operation of the walk-in cooler, and warm up other foods. Chef took container of soup out of cooler to properly cool in ice bath at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Breakfast foods (eggs, bacon, toast, etc) in prep cooler drawers measured 6-7C.
Corrective Action(s): Move all foods to working coolers.

Observation: Large build-up of mould within the ice machine, along the tops and bottom of plastic in the back of the cooler.
Corrective Action(s): Discard all the ice and clean and sanitize the ice machine as per manufacturer's instructions. Add this to your sanitation schedule.

Observation (CORRECTED DURING INSPECTION): Knife stored in basin of handwashing sink near cookline.
Corrective Action(s): Handwashing stations are for handwashing only. Chef removed knife from hand sink at time of inspection.

- dishwasher reached 75C at final rinse cycle
- dipper well not running at time of inspection as it isnot time for service (chef states it dipper well runs when ice cream is served); water available from dipper well faucet
- no obvious signs of pests
