302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): QUATS concentration in both sanitizer pails (X2) and in spray bottle (X1) measured at 50 ppm QUATS concentration during time of inspection. Operator repaired the QUATS dispenser nozzle at the 3-compartment sink during the time of inspection. QUATS in both sanitizer pails and in spray bottle later measured at 200 ppm.
Corrective Action(s): Ensure all QUATS sanitizer pails and sanitizer spray bottles are changed frequently, along with wiping cloths (as per approved Sanitation Plan) to prevent low sanitizer concentrations and to ensure QUATS sanitizer is always at the required concentration of 200 ppm QUATS. Check sanitizer concentration throughout the day with the test strips.

Observation (CORRECTED DURING INSPECTION): Hand washing station in back prep area not supplied with paper towel upon entry. Operator placed paper towel in the dispenser during time of inspection.
Corrective Action(s): Ensure all handsinks are supplied with liquid soap, paper towel, hot and cold running water at all times to ensure food handlers are able to wash their hands frequently and adequately and to prevent foodborne illness from cross-contamination.

Observation (CORRECTED DURING INSPECTION): QUATS dispenser unable to dispense 200 ppm QUATS solution required to adequately sanitize food contact surfaces, equipment and utensils. Operator was able to repair the nozzle/dispenser during time of inspection.
Corrective Action(s): Ensure the concentration of QUATS solution is measured frequently with the test strips (as per sanitation plan) to monitor sanitizer strength. Ensure QUATS solution is dispensed at 200 ppm QUATS concentration at all times. Contact maintenance to repair the nozzle immediately if it is unable to dispense the required QUATS concentration.

1. Temperatures:
- Walk-in cooler at 3'C
- 2-door stainless steel freezer at -18'C
- Sandwich cooler in service area at 4'C (top and bottom)
- All hot-holding units (drawers and inserts) measured at 60'C
- Beverage cooler at 3'C
- Under-counter cooler in service area at 3'C
- Thermometers available in all cold-holding units

Reminder: ensure sandwich cooler cover is placed on top of the inserts when not in use to prevent temperature increase

2. Sanitation:
- General sanitation of premises satisfactory during time of inspection
- Hand washing station in service area and staff washroom supplied with liquid soap, paper towel, hot and cold running water
- Chemical dishwasher measured at 100 ppm chlorine concentration at plate surface with test strip
- 3-compartment sink available with drain plugs for manual ware washing
- QUATS test strips available on-site
- No signs of pests during time of inspection

3. Storage:
- All food observed at least 6 inches off the floor
- All food observed covered in dry storage area and in coolers
- Chemicals stored away from food
- Food containers are stamped in to practice first-in-first-out method
- Raw meats are stored away from ready-to-eat foods

4. Administration:
- FOOD SAFE Level 1 trained staff available on premises (expires June 2023)
- Operating permit visible during inspection
