Observation (CORRECTED DURING INSPECTION): Wiping cloth noted on cutting board which appears soiled. No sanitizer in use. This can contaminate cutting board which is a food contact surface.
Corrective Action(s): Ensure wiping cloths are laundered regularly and used with sanitizer solution. Sanitizer solution (100ppm Chlorine) prepared at the time of the inspection for wiping cloths to be kept in.

Observation: Food debris and dirt noted around edges of equipment on floor and at junctions where the cabinets and wall meet floor
Corrective Action(s): Thoroughly clean floor to remove all dirt and debris paying particular attention to hard to reach areas. As part of your regular cleaning schedule, ensure that the floor is cleaned well to prevent build up of food debris. Correction date: Dec. 8/16

Observation: Shelving above dishwashing area where dishwashing racks are stored is no longer impervious or washable. Exposed particle board is present which absorbs moisture.
Corrective Action(s): Repair/replace shelving so that it is a smooth, impervious and washable surface. Correction date: Dec. 15/16

Liquid soap and paper towel present at the handwashing sink in the kitchen, in the front service area and in the staff and public washrooms
*Line cooler ( across from grill) was at 5C. Ensure it drops down to 4C. Thermometer present.
Under counter cooler was at 4C
Chest freezers were -11C to -16C
Stainless 2 door cooler was at 4C
Sliding door cooler was at 4C
Hot holding of rice was 65-71C
High temperature dishwasher achieved 74C in the final rinse at the dish surface as measured with peak holding thermometer
New tile is in place on wall at the corner near the grill. Improvement noted in the sanitation and maintenance of this area
