Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: 1) Dishwasher was not in working order according to the staff member on-site and one of the two Operators over phone. Although single-use service utensils are used, this facility is not equipped with a large enough 3-compartment sink as an approved means of manual ware-washing.
2) 2-compartment sink is not equipped with drain plugs to setup 100 ppm chlorine sanitizer in the second compartment sink.
3) Surface sanitizer was not setup at the time of inspection.
Correction: 1) Repair the high temperature dishwasher so that it maintains sanitizing standard of at least 71 degrees C at the plate; Correct by February 4, 2019 (within 2 business days) and contact the district Environmental Health Officer for a follow up inspection. If you wish to submit an alternate proposal involving manual ware-washing only with single use service utensils only, then submit your written proposal with size specifications of a 3-compartment sink with drain boards attached to the district Environmental Health Officer of Fraser Health for review and health approval purposes (business card was provided).
2) Obtain adequately sized drain plugs for the 2-compartment sink to fill up the first sink with soapy water and second sink with chlorine sanitizer; Correct today. Staff member used a wiping cloth as a temporary drain plug to fill up one of the sinks with 100 ppm chlorine sanitizer .
3) Staff member setup 100 ppm chlorine sanitizer upon verbal direction by the district Environmental Health Officer during the inspection. Re-sanitize prep. surfaces immediately.

Second follow up inspection on February 26, 2019:
-One compartment sink was installed next to the 2-compartment sink. Drain boards were present on both sides of the 3-compartment sink and drain plugs were available.
-Previously existing 2-compartment sink and newly installed one-compartment sink were operational and supplied with both hot and cold running water.
-Reminder: Make sure all food contact surfaces are properly washed, rinsed, sanitized in 100 ppm chlorine sanitizer, and then air dried.
-Dishwasher that was not in good working order was removed from the food premises.
-Air drying shelving unit was installed along the wall adjacent to the ware-washing sink.
-Only single-service utensils are permitted and this is a condition on the permit to operate. Only pizza is made and sold on-site.
-Public Health Act Correction ORDER was rescinded.
NOTE: If there are any changes to the menu and/or volume/type of utensils used on-site in the future, you must contact the district Environmental Health Officer and obtain written health approval from them prior to making changes or adding those items.
