Observation (CORRECTED DURING INSPECTION): Dipper well not on and scoop had been used
Corrective Action(s): Ensure dipper well is turned on once an ice cream scoop has been turned on.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Observed three different food products thawing at room temperature.
Corrective Action(s): Two of the three products were still frozen, placed into cooler during inspection. The third was near room temperature and was discarded at the time of inspection.

Ensure all foods are thawed in a cooler at 4C or under cold running water. Foods are not to be left on the counter for thawing. Be sure to plan ahead when food items are needed so as to move items into walk-in a day or two before product is needed.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: General Cleanliness of facility requires improvement. Address the following areas:
Corrective Action(s): 1. Underneath, around and behind ALL equipment. Including all shelves
2. All sinks
3. Two 3-rack carts. These carts require a very thorough cleaning or are to be replaced. Paper is not be used to line racks
4. All bins housing equipment are to be rotated with a new clean bin.
5. Ensure all dry good bins are firmly closed after use
6. Disphit including the exterior of the dishwasher and stainless steel walls
7. All metal storage racks - in walkin cooler and dish storage, specifically

Observation: Observed several spray bottles throughout facility that are not labelled
Corrective Action(s): Ensure all spray bottles are accurately labelled with their contents - I.e. "Sanitizer" or "Quats"

Observation: Few items in kitchen are in disrepair.
Corrective Action(s): 1. Screen door - the screen has come away from one corner of the door. Repair screen.
2. Tiles missing or broken - repair all broken or replace all missing tiles at walls

Comments

Temperature logs and Dishwasher log is not being maintained - Last log seems to be from March. Ensure temperatures are checked and recorded atleast twice daily and dishwasher is checked and recored at least once daily. Record these on a log that is available for inspection. Also, ensure that ALL coolers and hot holding units are checked throughout the facility - this include front of house coolers and hot holding.
Ensure every cooler has a thermometer - this will be checked on follow-up inspection.

Cleanliness of facility requires improvement - Ensure staff and cleaning staff communicate and assign tasks to ensure the whole kitchen is kept clean. Seems to be some gaps in who is responsible for what task at this time.
