Observation (CORRECTED DURING INSPECTION): Sweet and sour sauce for noodles in hot holding unit probed to be 47C internal temperature.

- Operator moved sauce to stove top to bring up to 67C. Ensure all foods intended for hot holding can maintain an internal temperature of 60C or hotter. Hot holding units are not meant to heat food.

Observation (CORRECTED DURING INSPECTION): Hot water knob for handsink in kitchen area does not work. No hot water provided, only cold water from the cold water knob.

- Staff are still able to perform hand hygiene by using cold water only or at the adjacent 2-compartment sink. Faucet is to be replaced by the operator this week.

**2 door cooler in back storage area and display cooler in front are being used only for dry storage. Small chest freezer next to domestic fridge is not in use.

- Spray bottle contained 200ppm bleach solution.
- High temperature dishwasher achieved a final rinse temperature of 71.2C at the plate.
- Reviewed cooling and heating practices with operator. No concerns.
- General sanitation was satisfactory.
- Overall food storage was satisfactory - no incompatible storing, all food items at least 15cm off the floor.
- Vent hood appeared greasy. Next service date according to label was July 7, 2021. Company was contacted but could not be available on or before scheduled date.
- No signs of pests at the time of inspection. Pest control devices were noted on site - services are provided by Orkin every 2 months.
- Last pest control report (May 19, 2021) was reviewed with no concerns.
- FOODSAFE requirements met - operator has a certificate valid until February 3, 2023.
- Health permit posted in conspicuous location.

**facility is now open for dine-in again following COVID-19.
