Observation (CORRECTED DURING INSPECTION): Sauteed onions, mushrooms, and beef sauce observed to be stored at room temperature. Staff informed that it was made 3-4 hours ago.
Corrective Action(s): Discard the aformentioned items. All hot potentially hazardous foods must be hot-held at 60C or higher.

Observation (CORRECTED DURING INSPECTION): Food debris observed underneath the meat slicer guard and blade.
Corrective Action(s): Clean and sanitize the aformentioned item. Meat slicer must be cleaned and sanitized after each use or every 2 hours of continuous use. Meat slicer must be dissembled prior to cleaning and sanitizing.

Observation: Built-up of grease observed underneath the cookline and exhaust hood vents. THIS IS A REPEAT VIOLATION.
Corrective Action(s): Clean and sanitize the aformentioned areas. Conduct thorough cleaning (e.g. pressure wash) underneath the cookline. Daily cleaning and sanitizing under hard to reach areas must be conducted to prevent grease build-up. Weekly cleaning of exhaust hood vents must be conducted. Increase in frequency of exhaust hood vents may be warranted depending on volume to prevent grease build-up. Corrected by: July 17, 2023.

Routine Inspection conducted today.

Handwashing sinks well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottles and dispenser measured at 200ppm. 2-compartment sink available. Low-temperature dishwasher measured at 200ppm chlorine. Glasswasher measured at 25ppm iodine.
Prep cooler, stand-up cooler, walk-in cooler measured at 4C or lower. Stand-up freezer, undercounter freezer, walk-in freezer measured at -18C or lower. Hot food measured at 60C or higher on top of flat grill.
Ice machine in sanitary condition.

Overall, facility is well organized.
