304 - Premises not free of pests [s. 26(a)]
Observation: Mice dropping noticed in several areas of the restaurant including dry stroage room, front coffee service station, hallways used for storing pop bottles and the entrace corridors.
Corrective Action(s): Hire a licensed pest control company for rodent monitoring and control. Clean all droppings and clean floors especially in corners using a bleach mop. More monitoring/control devices (snap traps/glue traps) recommended. (Immediately).

Observation:
Corrective Action(s): 1. Reduce clutter and organize the kitchen and storage areas to discourage rodent harbourage.
2. Ensure to clean floors underneath the cook line, food prep counters and dishwashign area throughly every night.
3. All cartons, eqipment, boxes, bags of flour, onions and other aticles must be stored at least 6 inches off the floor and away from the wall to discourage mice harborage.
4. You must not leave any food or beverage item exposed overnight. All food debris must be removed daily.
5.. Seal or patch any holes in the walls. (By Feb. 26, 2018)

Observation: Buiild up of grease noticed underneath the cookline and on the fume hood.
Corrective Action(s): Fume hood must be serviced and cleaned professionally. Ensure to clean all cooking equipment and floor underneath the cook line to remove greae build-up (By Feb. 26, 2018).

Comments

* Do not use any rodenticide poison bait within the food premises. Eliminate food, water and hiding places to effectively control rodents.
Fume hood must be cleaned at least 3 times/year. A validation sticker must be affixed on the side of the hood as proof of cleaning.
* Ensure to seal the tiles underneath the food preparation counter with grout.
* Seal or patch any remaining gaps along the newly installed stainless steel back splash behind dish washing table.
* Ensure to seal or patch any hoes in the walls or along the wall shelving to allow for easy cleaning and to discourage pest harbourage.
* Remove any old cooler compressors in the under-counter cabinets as they hinder proper cleaning of those spaces and food/grease build up can attract pests.
* Remove any old compressors and articles not being used in the bar area.


-New washable panels have been installed in the walk-in cooler. Old wooden shelving have been replaced with metal shelving.
-New stainless steel back splash has been installed in the dishwashing area. Good.

Walk-in cooler below 4 C.
Sliding door cooler < 4 C.
All other coolers below 4 C.
Hot holding of soups and gravies> 60 C.
Liquid soap and paper towels available at the hand sinks.
Dishwasher : 50 ppm chlorine at the plate surface during final rinse.

Big improvement required in general sanitation and getting rid of unnecessary articles/items.
Re-inspection will be conducted to check compliance with the required corrections.
