Observation (CORRECTED DURING INSPECTION): Door of display coolers opened for a prolonged period of time, causing the ambient temperature to spike up to 11C. Sandwiches inside were around the same temperature.
Corrective Action(s): Sandwiches were placed into the walk-in cooler. After 30 minutes, the display coolers dropped back down to 4C. Sandwiches were then placed back into the display coolers.

REFRAIN from leaving the prep cooler doors open! They must be at 4C or less to keep food cold to prevent the growth of bacteria that could cause foodborne illness.

Observation (CORRECTED DURING INSPECTION): Diversy "D10" Detergent Sanitizer dispenses approximately 0 ppm quats after testing with test strips. However, the presence of quats was confirmed by directly testing the stock bottle with test strips.
Corrective Action(s): Service the dispenser or change the system so that it can reliable dispense a minimum of 200-400 ppm quaternary ammonium compound (and can be verified with test strips). Sanitizing pail with 200 ppm bleach solution was prepared on-site at time of inspection.

Observation: Quaternary ammonium compound dispenser (D10 "Detergent Sanitizer") does not release any sanitizer (quats), according to test strip.
Corrective Action(s): 1. Service the dispenser so that it releases 200-400 ppm quats. In the meantime, use a bleach sanitizing pail (1 capful undiluted bleach per litre, one tablespoon per gallon of water) containing 200 ppm chlorine residual.

Comments

Routine inspection conducted. The following observations were made:

1. General Comments
- Premise is well lit and maintained in good sanitary condition. No accumulation of debris or grime observed around flooring area

2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- High-temperature dishwasher sanitizes at final rinse temperature of 74C at the plate (Min: 71C)
- Utensils, ladles, cutting boards, knives, scoops securely stored and maintained in sanitary condition
**- BEGIN maintaining sanitizer logs for the dispenser at the beginning of the day**

3. Temperatures
- Display coolers at 4C (was initially at 11C at beginning of inspection due to doors left open)
- Walk-in cooler at 4C
- Walk-in freezer at -18C
- Back stainless steel refrigerator at 4C
- Back stainless steel freezer at -18C or below
- Undercounter coolers at 4C
- WARNING: No temperature logs were maintained since Sep 12, 2018. YOU MUST maintain temperature logs daily to ensure that equipment is functioning normally each day.

4. Storage
- Dry storage area is well maintained
- Bulk storage area contains flour, oats, and other dried goods stored in food bins
- Food items are covered in tight-fitting lids

5. Administrative
- Substitute chef on-site has FoodSafe 1

6. Pest Control
- No signs of recent pest activity at time of inspection
- Mechanical trap underneath corner shelving of dry storage room lacks sticky pad. Please equip all mechanical traps with sticky pads
