Observation: 1. Dark, encrusted black buildup noted below the flat grill.
2. Heavy carbon and grease buildup noted on the vent hood.
3. Encrusted grease buildup and debris noted on the floor below the deep fryer.
4. Fruit flies excrement noted on the wall by the electrical panel.

Corrective Action(s): Wash, rinse and sanitize the abovementioned areas. Encrusted carbon and grease buildup may become a fire hazard if allowed to accumulate. These buildups are also a food source to fruit flies and potentially other pests, please clean to help with the fruit fly issue.

Routine inspection conducted today:
Handwash stations equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
Freezer unit was at ≤ -18C.
Hot hold food products were noted > 60C.
Food products were stored at least 6 inches off the floor.
High temperature dish machine was reading at 71C at the plate level during the rinse cycle.
Chlorine sanitizer spray bottle was at 200 PPM.
Manager's FOODSAFE level 1 certificate verified - expires December 29, 2026.
