Observation (CORRECTED DURING INSPECTION): No surface sanitizer in the back prep area.
Corrective Action(s): The operator provided new surface sanitizers in spray bottles at 200ppm Quat solution. Sanitizers are to be available at all times to staff to properly clean and sanitize food contact surfaces.

Observation (CORRECTED DURING INSPECTION): No paper towels inside the paper towel dispenser at the main handwashing station.

Observation (CORRECTED DURING INSPECTION): Boxes of Indian sweets (plain gurr) were stored uncovered at the front of the store. Handles of scoops and tongs were touching the food items.
Corrective Action(s): Move the boxes away from the customers. All unpacked sweets that are ready to eat must be stored in bins with proper lids to protect from contamination. Ensure that the handles of scoops and tongs do not touch the food items.

Comments

- General sanitation is satisfactory.
- All coolers (display, beverage, upright, walk in) < or = 4C
- All freezers (upright, walk in) < or = -18C
- All coolers and freezers equipped with working thermometers.
- Three compartment sink available for manual dishwashing of utensils (i.e. knives, cutting boards, scoops) and bulk bin. Quat sanitizer available at 200ppm.
- Bulk food items are dispensed through a gravity dispenser or using scoops. Ensure that the scoop handles do not touch the food items.
- Random food items (i.e. dairy products, eggs) checked for expiration dates, condition of packaging, and signs of deterioration. All in good condition.
- Dry storage area has adequate wire racks and dry food items are stored at leasts 6 inches off the floor.
- No signs of pest activity. Regular pest inspection conducted on a monthly basis. Email the pest reports to the health inspector for review.
Note: The operator stated that a new dry rack will be installed behind the three compartment sink.
