Observation (CORRECTED DURING INSPECTION): Found large bowl of cooked meat cooling top layer was 17C and bottom layer was 30 C
Corrective Action(s): Must cool foods in small portions or thin layers to ensure foods cool rapidly. Ensure foods cool from 60 to 20 C in 2hours and then 20 to 4 C in 4 hours in cooler

Observation (CORRECTED DURING INSPECTION): Found bean sprouts siting at room temperature (20C), this is a continual repeated violation.
Corrective Action(s): Must ensure bean sprouts are kept below 4C at all times. Purchase a prep cooler, or place in upright cooler to ensure 4C or colder is maintained. Bean sprouts were discarded. As this is a repeat violation, a ticket may be issued.

Observation (CORRECTED DURING INSPECTION): Found cooked rice being stored at 20 C under the counter without lid
Corrective Action(s): Must ensure to keep hot foods above 60 C at all times. Purchase hot holding units if which to make larger batches of rice dishes. RIce was discarded.

Observation (CORRECTED DURING INSPECTION): Found numerous items (peelers, slicers, cutting boards, large grey food containers, strainers etc) not properly washed and sanitized as there was a heavy build up of grease and food.
Corrective Action(s): Must ensure all food contact surfaces (utensils, cutting boards, pots, etc), are washed and sanitized right after use to remove any and all food and grease after each use before putting away or at least every 4 hours if using continually. Rewash and sanitize all dirty equipment and utensil.

Observation (CORRECTED DURING INSPECTION): Hand sink in kitchen is blocked by garbage cans on the grease trap, and cart with dishes.
Corrective Action(s): Ensure hand sink is fully accessible at all times. Relocate garbage containers and cart so can easily reach the hand wash station.

Observation: 1. Found food sitting on the floor in the walk in cooler.
2. Found food being stored uncovered throughout the premises (i.e. meats and flour)
3. Found food being stored amongst personal items, (i.e. clothes, toys, sleeping and play area).
Corrective Action(s): 1. Must ensure food is store 6" off the floor to assist in cleaning, prevention of contamination if there were a flood, and to assist in monitoring for pests
2. Ensure all foods have lids that are secured in place (not loose, ajar, or missing). If no lid is available cover with plastic wrap or tin foil
3. Must ensure clear defined areas between food storage and personal use are.

Observation: Found food splattered on almost all walls, wire drying rack has grease and dust build up, grease is dripping from the exhaust hood, food and grease debris noted under counters and equipment and ceiling has dust build up at the air vents.
Corrective Action(s): A deep and thorough cleaning is required on all walls, ceiling tiles, shelving units and floors (especially in hard to reach areas).

Observation: 1. Found tin foil and cardboard being used through out premises to replace increased cleaning.
2. Cardboard boxes being used as food containers.
Corrective Action(s): 1. Remove all tin foil on equipment along the cooking line, and remove cardboard from shelves and grease trap.
2. Do not use cardboard boxes to store food items, as they are not easily cleanable and can go moldy.

2. Found multiple broken plastic lids and containers being used.
Corrective Action(s): 1. Must ensure all equipment is in good working order, and doesn't pose a risk of contamination to the food.

2. Discard all broken, cracked, or chipped pieces of equipment to prevent rick of food contamination and injury to customer.

- Dishwasher had a final rinse of 82 C at the plate and 90 C at the gauge
- Wiping rags were 200 ppm clorine, ensure more than the 1 bucket at the front counter is prepared
- No signs of pest activity noted during inspection.
NOTE: ensure kids are not playing or hanging out in the kitchen area they should stay to designated personal areas to prevent food contamination and injury to children.
