Routine inspection conducted today.
One of the operators working out of Core Commissary Kitchen - works out of station 9.
Hours of work: Varies - whenever orders come in.

Handwash station accessible, equipped with hot and cold running water, liquid soap and paper towel.
Bleach solution (prepared by the operator) available at the work station. As per the operator, sanitize work surface before operation - good.
Walk-in cooler was noted at 4.0C.
Reviewed with operator to check the temperature of the walk-in cooler before start of every shift and ensure that it can maintain at 4.0C or below before storing food in this unit or else use an alternate cooler that is capable of maintaining 4.0C or less.
No freezer space required.
Dry goods and equipment stored in a sanitary manner in 2 designated bins.
Work station noted cleaned and in a sanitary condition.
Uses the high temperature dish machine provided by the facility. At the time of inspection, 78.0C detected on the plate level during the rinse cycle.
Reviewed with the operator to check the rinse temperature gauge before use. The rinse temperature gauge must be able to reach 180.0F during the rinse cycle before use. If not, run the dishmachine a second time, if temperature is not reach, contact the operator of Core Kitchen and used the 3-compartment sink instead for manual warewashing.
