Ambient surface temperature of processing room 12 C.
Walk-in cooler 3 C.
Reviewed cleaning procedures for grinder and saw --> no concerns. Staff uses quat for these equipment (measured ~ 200 ppm quat from dispenser) and bleach for cutting boards (*note only need 1 tsp regular bleach: 1 L water). Test strips available for quat.
