Observation (CORRECTED DURING INSPECTION): Sauces and tuna salad observed to be stored in the under counter cooler that is holding an air ambient temperature of 6C. Operator informed that the tuna salad and sauces have been there in the cooling unit for 2 hours.
Corrective Action(s): Move the aforementioned items in a cooling unit able to hold an air ambient temperature of at least 4C or lower.

Observation: Under counter cooler at the front area measured at 6C air ambient temperature. It was observed that the cooler door popped open once slammed shut due to air pressure. Walk-in freezer measured at -12C air ambient temperature.
Corrective Action(s): Ensure the under counter cooler at the front area is able to hold an air ambient temperature of 4C or lower. Prevent slamming the under counter cooler door to ensure that the cooler door is not popped open. Do not store potentially hazardous foods in the under counter cooler until it is able to hold an air ambient temperature of 4C or lower. Service the walk-in freezer to hold an air ambient temperature of -18C or lower. Corrected by: Immediately.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs sanitizer bucket, spray bottle, and dispenser measured at 200ppm. 3-compartment sink available for manual dishwashing. Low-temperature dishwasher is not currently in use and sign is posted to not use the unit.
Prep cooler, display cooler, and walk-in cooler measured at 4C or lower. Hot-holding units measured at 60C or higher. Temperature logs are well maintained.
Sandwich knives are stored under ice water. Ice water is changed every 1-2 hours.
Food is stored at least 6 inches off the floor. Mop sink in sanitary condition.
No signs of pests observed.
Overall, facility is well organized and clean.
